  • 4 cups of chicken or vegetable broth
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 carrots, sliced
  • 2 cups bok choy, chopped
  • 1 cup shiitake mushrooms, sliced
  • 2 green onions, chopped
  • Fresh cilantro for garnish
  • Soy sauce to taste
  • Optional toppings: sesame oil, chili oil

Instructions

  1. Prepare your broth: In a large pot, bring your broth to a simmer over medium heat. Add minced garlic and ginger.
  2. Sauté the vegetables: In a skillet with a splash of oil, sauté the carrots, bok choy, and mushrooms for 4-5 minutes until just tender but vibrant.
  3. Add the potstickers: Once the broth is simmering, gently add the potstickers. Cook for 5-7 minutes if frozen.
  4. Combine and simmer: Stir in the sautéed vegetables and let everything simmer for another 2-3 minutes.
  5. Garnish and serve: Ladle into bowls, sprinkle with fresh herbs, and let everyone add their own toppings.

Notes
