  • 1 cup all-purpose flour (or gluten-free flour)
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1/4 teaspoon salt
  • 1 can (15 oz) pumpkin puree
  • 2 large eggs
  • 1 cup coconut milk (or heavy cream)
  • 1/4 cup maple syrup (or brown sugar)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine rolled oats, flour, brown sugar, and salt. Add the melted butter and mix until crumbs form.
  3. Press the crust mixture into a greased tart pan, covering the bottom and edges evenly.
  4. Bake the crust in the preheated oven for 10-12 minutes until lightly golden.
  5. In another bowl, whisk together pumpkin puree, eggs, coconut milk, maple syrup, and spices.
  6. Pour the filling into the pre-baked crust and smooth it out gently.
  7. Bake for 30-35 minutes, or until the filling is set and the top is lightly golden.
  8. Allow the tart to cool for at least 15 minutes before serving. Top with whipped cream or maple syrup if desired.

Notes

For best flavor, let the tart sit overnight in the fridge before serving.
