Instructions
- Preheat your oven to 325°F (160°C).
- Mix graham cracker crumbs, melted butter, and brown sugar until combined and press into a greased springform pan. Bake for 10 minutes, then cool.
- Beat cream cheese until smooth. Gradually add granulated and brown sugar, mixing until fluffy. Stir in vanilla and cinnamon.
- Add eggs one at a time, mixing thoroughly after each addition.
- Pour the filling over the cooled crust, smoothing the top.
- Bake for 50-60 minutes until edges are set and center jiggles slightly.
- Cool on the counter before refrigerating for at least four hours.
- Before serving, top with whipped cream, cinnamon sugar, or chocolate sauce if desired.

For a creamier texture, serve at room temperature. Best made a day in advance for optimal flavor.
