Ingredients

  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 2 tsp ground cinnamon
  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup butter, melted
  • 1/2 cup brown sugar
  • Optional toppings: whipped cream, chocolate sauce, cinnamon sugar

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Mix graham cracker crumbs, melted butter, and brown sugar until combined and press into a greased springform pan. Bake for 10 minutes, then cool.
  3. Beat cream cheese until smooth. Gradually add granulated and brown sugar, mixing until fluffy. Stir in vanilla and cinnamon.
  4. Add eggs one at a time, mixing thoroughly after each addition.
  5. Pour the filling over the cooled crust, smoothing the top.
  6. Bake for 50-60 minutes until edges are set and center jiggles slightly.
  7. Cool on the counter before refrigerating for at least four hours.
  8. Before serving, top with whipped cream, cinnamon sugar, or chocolate sauce if desired.

Notes

For a creamier texture, serve at room temperature. Best made a day in advance for optimal flavor.
