- 2 cups heavy cream
- 3/4 cup granulated sugar (divided)
- 6 egg yolks
- 1 tablespoon pure vanilla extract or 1 vanilla bean
- A pinch of salt
Instructions
- Preheat your oven to 325°F (160°C) and prepare your baking dish.
- In a saucepan over medium heat, gently heat the heavy cream until it begins to simmer, then remove from heat and stir in vanilla.
- In a bowl, whisk together egg yolks, 1/2 cup granulated sugar, and salt until thick and pale.
- Slowly pour warm cream into the egg yolk mixture, whisking continuously.
- Strain the mixture into a measuring jug to ensure a smooth custard.
- Pour the custard into ramekins, filling each about three-quarters full.
- Place ramekins in a large baking dish, pouring hot water into the pan until it reaches halfway up the sides of the ramekins.
- Bake for about 30-35 minutes, until the centers are just set but still slightly jiggly.
- Cool the ramekins to room temperature, cover, and refrigerate for at least 2 hours.
- Before serving, sprinkle an even layer of granulated sugar on top and caramelize with a kitchen torch or by broiling in the oven.
- Let cool a few minutes before serving.
Notes
Cool the torched crème brûlée for a few minutes to allow the sugar to harden fully.
