Description

A rich and creamy dessert that combines the smoothness of custard with a crunchy caramel top, bringing joy and nostalgia to family gatherings.


Ingredients

  • 2 cups heavy cream
  • 3/4 cup granulated sugar (divided)
  • 6 egg yolks
  • 1 tablespoon pure vanilla extract or 1 vanilla bean
  • A pinch of salt

Instructions

  1. Preheat your oven to 325°F (160°C) and prepare your baking dish.
  2. In a saucepan over medium heat, gently heat the heavy cream until it begins to simmer, then remove from heat and stir in vanilla.
  3. In a bowl, whisk together egg yolks, 1/2 cup granulated sugar, and salt until thick and pale.
  4. Slowly pour warm cream into the egg yolk mixture, whisking continuously.
  5. Strain the mixture into a measuring jug to ensure a smooth custard.
  6. Pour the custard into ramekins, filling each about three-quarters full.
  7. Place ramekins in a large baking dish, pouring hot water into the pan until it reaches halfway up the sides of the ramekins.
  8. Bake for about 30-35 minutes, until the centers are just set but still slightly jiggly.
  9. Cool the ramekins to room temperature, cover, and refrigerate for at least 2 hours.
  10. Before serving, sprinkle an even layer of granulated sugar on top and caramelize with a kitchen torch or by broiling in the oven.
  11. Let cool a few minutes before serving.

Notes

Cool the torched crème brûlée for a few minutes to allow the sugar to harden fully.
