- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 cup crumbled feta cheese (or shredded mozzarella)
- 1 egg, beaten (for binding)
- 1 package empanada dough (or homemade)
- Salt and pepper to taste
- Optional herbs (nutmeg, parsley, cilantro)
Instructions
- Sauté onions and garlic in a skillet until golden and fragrant. Add spinach and cook until wilted. Incorporate cheese, season with salt and pepper, and let cool.
- If making dough, combine flour, salt, butter, and water; chill for at least 30 minutes. If using store-bought, let it sit at room temperature.
- Roll out dough into 6-inch circles. Add filling to one half, brush edges with beaten egg, fold, and crimp with a fork.
- Preheat oven to 375°F (190°C). Place empanadas on a lined baking sheet, brush tops with egg wash, and bake for 20-25 minutes until golden brown.
- Serve warm with salsa, guacamole, or yogurt sauce.
