Description

Ingredients

  • 2 cups fresh spinach (or frozen)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup crumbled feta cheese (or shredded mozzarella)
  • 1 egg, beaten (for binding)
  • 1 package empanada dough (or homemade)
  • Salt and pepper to taste
  • Optional herbs (nutmeg, parsley, cilantro)

Instructions

  1. Sauté onions and garlic in a skillet until golden and fragrant. Add spinach and cook until wilted. Incorporate cheese, season with salt and pepper, and let cool.
  2. If making dough, combine flour, salt, butter, and water; chill for at least 30 minutes. If using store-bought, let it sit at room temperature.
  3. Roll out dough into 6-inch circles. Add filling to one half, brush edges with beaten egg, fold, and crimp with a fork.
  4. Preheat oven to 375°F (190°C). Place empanadas on a lined baking sheet, brush tops with egg wash, and bake for 20-25 minutes until golden brown.
  5. Serve warm with salsa, guacamole, or yogurt sauce.
