- 1 cup granulated sugar
- 2 tablespoons matcha powder
- 1 tablespoon baking powder
- 1 pinch salt
- ½ cup unsalted butter, softened
- 3 large eggs
- 1 teaspoon vanilla extract
- ½ cup milk or non-dairy milk
Instructions
- Preheat the oven to 350°F (175°C) and grease and flour an 8-inch round cake pan.
- Sift together the flour, sugar, matcha powder, baking powder, and salt in a bowl.
- Cream the butter with the sugar in a separate bowl until light and fluffy.
- Add the eggs one at a time and mix well after each addition. Stir in the vanilla extract.
- Gradually add the dry mixture to the wet mixture, alternating with the milk, until combined. Be careful not to overmix.
- Pour the batter into the prepared pan and smooth the top. Bake for 25-30 minutes or until a toothpick comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Dust with powdered sugar or serve with whipped cream and fresh berries if desired.
Notes
For a vegan version, replace eggs with flax eggs and butter with coconut oil or vegan butter. Ensure to use high-quality matcha powder for the best flavor.
