Description

Comforting mashed potato cups filled with cheese and flavors that warm the heart.


Ingredients

  • 2 pounds Yukon Gold or Russet potatoes
  • 4 tablespoons butter
  • 1/2 cup cream or milk
  • 2 cloves garlic, minced
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup fresh parsley or chives, chopped
  • Optional: bacon bits, sautéed mushrooms, or caramelized onions

Instructions

  1. Peel and cut the potatoes into chunks. Place them in a pot of water and bring to a boil. Cook until tender but not mushy.
  2. While the potatoes cook, melt the butter in a skillet and sauté the minced garlic for about a minute until fragrant.
  3. Drain the cooked potatoes and return them to the pot. Mash until smooth, then stir in the sautéed garlic, cream, and cheese.
  4. Season with salt and pepper to taste.
  5. Preheat your oven to 375°F (190°C).
  6. Grease a muffin tin and begin spooning or piping the mashed potatoes into each cup, filling generously.
  7. Create a well in the center of each cup for extra cheese, bacon, or herbs if desired.
  8. Bake for 20-25 minutes or until the tops are golden brown.
  9. Let cool slightly before serving.

Notes

Avoid overcooking the potatoes for a fluffy texture. Use a potato ricer for smooth consistency if you can.
