- 4 medium sweet potatoes, peeled and cubed
- 1/4 cup salted butter, melted
- 1 cup cremini or shiitake mushrooms, chopped
- 4 strips bacon, crumbled
- 2 tablespoons maple syrup
- 2 tablespoons fresh rosemary or thyme, chopped
- 1/2 teaspoon ground cinnamon
- 1 cup shredded cheddar cheese (optional)
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Boil the sweet potatoes in salted water for about 15 minutes or until tender. Drain and set aside to cool.
- In a skillet, cook the crumbled bacon until crispy, then remove from the pan and drain on paper towels.
- Add the chopped mushrooms to the same skillet and sauté until golden brown.
- In a large bowl, mash the sweet potatoes until smooth. Stir in melted butter, maple syrup, sautéed mushrooms, half of the bacon, and herbs, along with salt, pepper, and cinnamon. Adjust seasonings as needed.
- Transfer the mixture to a greased baking dish, smooth down, and top with cheese and remaining bacon.
- Bake for 25-30 minutes until the top is bubbling and golden.
- Garnish with fresh herbs before serving.
