- 8 oz pasta (fettuccine or penne)
- 2 boneless, skinless chicken breasts
- 1 cup thinly sliced or diced ham
- 1 cup Swiss cheese, shredded
- 1 cup Gruyère cheese, shredded
- 8 oz cremini or button mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 2 tbsp fresh parsley or thyme, chopped
- Salt and pepper to taste
- Pinch of nutmeg
- 2 tbsp butter
Instructions
- Cook the pasta in salted boiling water until al dente. Reserve half a cup of pasta water, then drain.
- In a skillet, melt butter over medium heat and sauté mushrooms until golden, about 5-7 minutes. Add garlic in the last minute.
- If using raw chicken, season and cook the chicken in the same skillet until golden, about 5-6 minutes per side. Remove, chop, and return to the skillet.
- Pour in the cream and melt the cheese into the mixture, adjusting with reserved pasta water as needed.
- Add pasta, mushrooms, chicken, and ham, tossing to coat thoroughly. Season with salt and pepper.
- Garnish with fresh herbs and serve warm.
Notes
Feel free to substitute proteins or use gluten-free pasta as needed. This dish is perfect for utilizing leftover cooked chicken.
