Description

A delightful fusion of creamy pasta with chicken, ham, and mushrooms, perfect for family gatherings.


Ingredients

  • 8 oz pasta (fettuccine or penne)
  • 2 boneless, skinless chicken breasts
  • 1 cup thinly sliced or diced ham
  • 1 cup Swiss cheese, shredded
  • 1 cup Gruyère cheese, shredded
  • 8 oz cremini or button mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tbsp fresh parsley or thyme, chopped
  • Salt and pepper to taste
  • Pinch of nutmeg
  • 2 tbsp butter

Instructions

  1. Cook the pasta in salted boiling water until al dente. Reserve half a cup of pasta water, then drain.
  2. In a skillet, melt butter over medium heat and sauté mushrooms until golden, about 5-7 minutes. Add garlic in the last minute.
  3. If using raw chicken, season and cook the chicken in the same skillet until golden, about 5-6 minutes per side. Remove, chop, and return to the skillet.
  4. Pour in the cream and melt the cheese into the mixture, adjusting with reserved pasta water as needed.
  5. Add pasta, mushrooms, chicken, and ham, tossing to coat thoroughly. Season with salt and pepper.
  6. Garnish with fresh herbs and serve warm.

Notes

Feel free to substitute proteins or use gluten-free pasta as needed. This dish is perfect for utilizing leftover cooked chicken.
