- 1 lb lean ground chicken
- 1 ripe avocado
- 2 cloves fresh garlic, minced
- 1 small onion, finely chopped
- 1/2 cup bread crumbs
- 1 egg, beaten
- Salt and pepper, to taste
- Fresh herbs (cilantro or parsley), chopped
Instructions
- In a mixing bowl, combine ground chicken, chopped onion, minced garlic, breadcrumbs, beaten egg, and salt and pepper. Fold in chopped cilantro or parsley if desired.
- Gently form the mixture into patties, about ¾ inch thick.
- Chill the patties in the refrigerator for 30 minutes.
- Heat a skillet over medium heat and add a splash of olive oil. Cook the patties for about 5-6 minutes on each side, until they reach an internal temperature of 165°F.
- Slice the avocado just before serving. Layer on top of the burger or mash and spread on the bun.
- Serve on toasted burger buns with fresh veggies and optional toppings like chipotle mayo.
