Ingredients
- Sausage (pork or turkey)
- Potatoes (Yukon gold or Russet)
- Cheese (shredded cheddar or mozzarella)
- Onion
- Garlic
- Bell pepper
- Herbs (such as thyme or parsley)
- Olive oil or butter
Instructions
- Wash and dice the potatoes into bite-sized pieces. Chop the onions, bell pepper, and garlic.
- In a large skillet, heat olive oil or butter over medium heat. Add sausage, breaking it into pieces, and cook until browned, about 5-7 minutes. Remove sausage and set aside.
- In the same skillet, add diced onions and bell peppers. Cook until soft, about 3-4 minutes. Add garlic and cook for an additional minute.
- Add diced potatoes to the skillet, season with salt, pepper, and herbs. Stir to coat and cover the skillet.
- Cook the potatoes for 15-20 minutes, stirring occasionally, until golden and fork-tender.
- Return the sausage to the skillet, stir to combine, and let mingle for a couple of minutes.
- Sprinkle cheese over the top, cover, and let melt for 3-5 minutes.
- Serve hot, garnished with fresh herbs.
Notes
Feel free to substitute sausage for chicken or add more vegetables like zucchini. Avoid overcooking garlic to prevent bitterness.
