Ingredients

  • Potatoes (Yukon gold or Russet)
  • Cheese (shredded cheddar or mozzarella)
  • Onion
  • Garlic
  • Bell pepper
  • Herbs (such as thyme or parsley)
  • Olive oil or butter

Instructions

  1. Wash and dice the potatoes into bite-sized pieces. Chop the onions, bell pepper, and garlic.
  2. In a large skillet, heat olive oil or butter over medium heat. Add sausage, breaking it into pieces, and cook until browned, about 5-7 minutes. Remove sausage and set aside.
  3. In the same skillet, add diced onions and bell peppers. Cook until soft, about 3-4 minutes. Add garlic and cook for an additional minute.
  4. Add diced potatoes to the skillet, season with salt, pepper, and herbs. Stir to coat and cover the skillet.
  5. Cook the potatoes for 15-20 minutes, stirring occasionally, until golden and fork-tender.
  6. Return the sausage to the skillet, stir to combine, and let mingle for a couple of minutes.
  7. Sprinkle cheese over the top, cover, and let melt for 3-5 minutes.
  8. Serve hot, garnished with fresh herbs.

Notes

Feel free to substitute sausage for chicken or add more vegetables like zucchini. Avoid overcooking garlic to prevent bitterness.
