A comforting side dish featuring creamy mashed potatoes enriched with sweet, caramelized onions.

- 2 pounds starchy potatoes (Russets or Yukon Gold)
- 2 large yellow or sweet onions, thinly sliced
- 4 tablespoons real butter
- 1/2 cup heavy cream or whole milk
- Salt, to taste
- Black pepper, to taste
- Optional: Fresh rosemary or thyme for garnish
Instructions
- Peel the potatoes and cut them into even chunks.
- Place the potato chunks in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil over medium-high heat, then cook until fork-tender, about 15-20 minutes.
- While the potatoes are cooking, heat a skillet over medium heat and melt 2 tablespoons of butter. Add the sliced onions and cook slowly, stirring frequently, until deep golden brown, about 20-25 minutes.
- Drain the cooked potatoes and return them to the pot. Mash the potatoes with a masher or ricer, adding the remaining butter and cream/milk until creamy. Season with salt and pepper.
- Gently fold in the caramelized onions into the mashed potatoes.
- Taste and adjust seasoning as needed. Serve with a sprinkle of fresh herbs or additional caramelized onions for garnish.
Notes
For a dairy-free option, substitute olive oil for butter and use low-fat milk instead of cream.
