Ingredients

- 2 lbs beef chuck or brisket, cut into cubes
- 1 large sweet onion, chopped
- 4 cloves garlic, minced
- 2 tsp cumin
- 2 tsp coriander
- 1 tsp cinnamon
- 2 carrots, chopped
- 2 potatoes, chopped
- 1 cup dried apricots or prunes
- 4 cups beef or chicken broth
- 3 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet or tagine over medium heat. Add chopped onions and minced garlic; sauté until translucent and aromatic.
- Add beef cubes, seasoning with salt, pepper, cumin, coriander, and cinnamon. Sear until browned on all sides.
- Stir in chopped carrots and potatoes, along with the dried apricots or prunes.
- Pour in the broth and deglaze the pan by scraping up the flavorful bits from the bottom.
- Bring to a simmer, cover, and cook slowly on the stove or transfer to an oven set at 325°F (160°C) for about two hours, until the beef is tender.
- Taste and adjust spices as needed before serving.
- Serve hot with couscous or crusty bread.
Notes
Cooking low and slow allows the flavors to meld beautifully. Taste periodically and adjust seasonings as necessary.
