A comforting and delicious dish combining tender chicken with a rich, cheesy filling of spinach and mozzarella.

- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach
- 1 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 4 oz cream cheese
- 1 tbsp olive oil
- Salt, to taste
- Pepper, to taste
- Fresh basil or parsley, for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add garlic and sauté for about a minute until fragrant.
- Toss in the spinach and cook until wilted. Remove from heat and let cool slightly.
- Mix the sautéed spinach with mozzarella cheese and cream cheese in a bowl. Add salt, pepper, and herbs; stir until well combined.
- Slice a pocket into the thickest part of each chicken breast carefully.
- Stuff each chicken pocket with the spinach and cheese mixture, securing with toothpicks if necessary.
- Rub the outside of the chicken with olive oil and season with salt and pepper.
- Transfer the stuffed chicken to a baking dish and bake for 25-30 minutes, or until the internal temperature reaches 165°F (75°C). Broil for a few minutes for a crispy exterior.
- Let the chicken rest for a few minutes before slicing.
Notes
For a richer flavor, you can use chicken thighs instead of breasts and add crumbled feta cheese as a substitute for mozzarella. Serve with roasted vegetables or a green salad.
