- 2 cups granulated sugar
- Juice of 1 lemon

Instructions
- Prepare the apples: Peel, core, and chop the apples into small, even pieces.
- Combine ingredients: In a large pot, mix the chopped apples with sugar, lemon juice, cinnamon, nutmeg, cloves, and vanilla extract.
- Cook the mixture: Place the pot over medium heat, stirring frequently until the sugar dissolves. Increase heat to boil, then reduce to a simmer. Cook for 30-45 minutes until thickened.
- Check the consistency: Place a spoonful on a chilled plate; if it wrinkles when pushed, it’s done.
- Can and store: Pour the hot jam into sterilized jars, seal with lids, and process in a boiling water bath for 10 minutes.
- Cool and enjoy: Once cooled, store jars in a cool, dark place. Serve the jam on toast, biscuits, or ice cream.

Choose a mix of sweet and tart apples for the best flavor. Stir frequently during cooking to prevent sticking.
