- 1/2 cup vegetable oil (or melted butter)
- 2 large eggs
- 1/2 cup buttermilk (or sour cream)
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 cup powdered sugar (for rolling)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk together your flour, cocoa powder, baking powder, and baking soda. Set aside.
- In another bowl, combine sugar and vegetable oil, blending until smooth. Add eggs one at a time, fully incorporating each before adding the next.
- Stir in buttermilk and vanilla extract until well combined.
- Gradually add dry ingredients to the wet mixture, beating on low until just combined. Don’t overmix.
- Refrigerate the dough for at least 30 minutes to enhance texture.
- Using a cookie scoop, form balls of dough and roll in powdered sugar until fully coated.
- Place them on a baking sheet lined with parchment paper, ensuring at least 2 inches of space between each ball.
- Bake for 10-12 minutes, or until tops crack and set. Allow to cool for a few minutes before transferring to a cooling rack.
Notes
Do not skip the chilling step for beautiful crinkles and to prevent spreading.
