Description

A simple yet delicious side dish featuring caramelized butternut squash, perfect for family gatherings and weeknight meals.


Ingredients

  • 1 medium Butternut Squash
  • 2 tablespoons Olive Oil
  • Salt to taste
  • Pepper to taste
  • Fresh Herbs (Sage or Thyme)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the squash by peeling it and slicing it in half lengthwise.
  3. Scoop out the seeds with a spoon.
  4. Cut the squash into roughly one-inch cubes.
  5. Toss the cubes in a large bowl with olive oil, salt, pepper, and your choice of herbs until evenly coated.
  6. Spread the seasoned squash in a single layer on a baking sheet.
  7. Roast in the oven for about 25-30 minutes, tossing halfway through.
  8. Serve hot, optionally finishing with a squeeze of fresh lemon juice.

Notes

For added flavor, substitute olive oil with avocado oil or experiment with garlic powder or smoked paprika in lieu of fresh herbs.
