- 1 medium Butternut Squash
- 2 tablespoons Olive Oil
- Salt to taste
- Pepper to taste
- Fresh Herbs (Sage or Thyme)
Instructions
- Preheat your oven to 425°F (220°C).
- Prepare the squash by peeling it and slicing it in half lengthwise.
- Scoop out the seeds with a spoon.
- Cut the squash into roughly one-inch cubes.
- Toss the cubes in a large bowl with olive oil, salt, pepper, and your choice of herbs until evenly coated.
- Spread the seasoned squash in a single layer on a baking sheet.
- Roast in the oven for about 25-30 minutes, tossing halfway through.
- Serve hot, optionally finishing with a squeeze of fresh lemon juice.
Notes
For added flavor, substitute olive oil with avocado oil or experiment with garlic powder or smoked paprika in lieu of fresh herbs.
