  • ¾ cup granulated sugar
  • ¾ cup brown sugar
  • 1 large egg
  • 1 cup pumpkin puree
  • 2 tsp coffee or espresso powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the flour, baking soda, salt, cinnamon, nutmeg, and allspice in a medium bowl.
  3. Cream the butter, granulated sugar, and brown sugar in a larger bowl until light and fluffy.
  4. Incorporate the egg and pumpkin puree, mixing until smooth.
  5. Combine the dry ingredients with the wet mixture, stirring until just combined.
  6. Add the espresso powder and mix well.
  7. Prepare a baking sheet with parchment paper.
  8. Scoop rounded mounds of dough onto the baking sheet, spacing them a couple of inches apart.
  9. Bake for 12-15 minutes until the edges are golden.
  10. Cool on the baking sheet for a few minutes before transferring to a wire rack.
