Description
Delightful mini cakes perfect for sharing on Valentine’s Day, featuring versatile flavors and easy preparation.
Ingredients
Scale
- 1 ½ cups all-purpose flour (or almond flour for gluten-free)
- 1 cup granulated sugar (or brown sugar)
- 3 large eggs (or unsweetened applesauce/flaxseed eggs for vegan)
- ½ cup unsalted butter (or coconut oil for dairy-free)
- 2 tsp baking powder
- ½ cup whole milk (or almond/oat milk)
- 1 tsp vanilla extract (or almond extract)
Instructions
- Preheat your oven to 350°F (175°C) and prepare mini cake pans by greasing or lining them with parchment paper.
- In a bowl, combine the dry ingredients: flour, sugar, baking powder, and salt.
- In another bowl, whisk together the wet ingredients: melted butter, eggs, and milk, and add flavoring extracts.
- Gradually fold the dry ingredients into the wet mixture until just combined, being careful not to over-mix.
- Pour the batter into mini cake pans, filling each about two-thirds full.
- Bake for 15-20 minutes or until a toothpick inserted comes out clean.
- Allow the cakes to cool completely in the pans, then transfer to a wire rack.
- Decorate with frosting, fruits, or sprinkles as desired.
Notes
Keep a close eye on the baking time to avoid over-baking. Let cakes cool completely before frosting to prevent melting.
