Description

Ingredients

  • 1 tsp baking powder

  • 2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream together the butter (or coconut oil) and sugar until light and fluffy.
  3. Add in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the gluten-free flour and baking powder, then gradually add the dry ingredients to the wet mixture.
  5. Fold in the chocolate chips and any optional mix-ins like nuts or dried fruit.
  6. Scoop tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.
  7. Bake for 10–12 minutes or until edges are lightly golden; centers should look slightly underbaked.
  8. Let cool on the baking sheet for 5 minutes before transferring to wire racks.

Notes

For a vegan option, substitute eggs with flax eggs and for sweeteners, use honey or maple syrup. Don’t forget to spoon flour into your measuring cup for best results.
