Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream together the butter (or coconut oil) and sugar until light and fluffy.
- Add in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the gluten-free flour and baking powder, then gradually add the dry ingredients to the wet mixture.
- Fold in the chocolate chips and any optional mix-ins like nuts or dried fruit.
- Scoop tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.
- Bake for 10–12 minutes or until edges are lightly golden; centers should look slightly underbaked.
- Let cool on the baking sheet for 5 minutes before transferring to wire racks.
Notes
For a vegan option, substitute eggs with flax eggs and for sweeteners, use honey or maple syrup. Don’t forget to spoon flour into your measuring cup for best results.
