Description

Ingredients

  • 200g high-quality dark chocolate (at least 70% cocoa)
  • 100g unsalted butter
  • 4 large eggs (yolks and whites separated)
  • 100g granulated sugar
  • 250ml heavy cream
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Melt the chocolate and butter: In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a double boiler, stirring gently until smooth.
  2. Whisk the egg yolks: In a separate bowl, whisk together the egg yolks and half of the sugar until they lighten in color.
  3. Add the melted chocolate and butter mixture, stirring continuously until well combined.
  4. Prepare the egg whites: Using a clean bowl, beat the egg whites until soft peaks form. Gradually add the remaining sugar, beating until glossy.
  5. Whip the cream: In another bowl, whip the heavy cream with the vanilla extract until soft peaks form.
  6. Combine: Gently fold a third of the whipped cream into the chocolate mixture, then carefully incorporate the egg whites followed by the remaining whipped cream.
  7. Chill: Spoon the mousse into a cake pan lined with parchment paper. Refrigerate for several hours or overnight.
  8. Serve: Remove the cake from the pan and let it sit for a few minutes. Dust with cocoa powder or serve with fresh berries.

Notes

For egg-free versions, use aquafaba as a replacement for egg whites. Coconut cream can substitute heavy cream.
