- 200g high-quality dark chocolate (at least 70% cocoa)
- 100g unsalted butter
- 4 large eggs (yolks and whites separated)
- 100g granulated sugar
- 250ml heavy cream
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions
- Melt the chocolate and butter: In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a double boiler, stirring gently until smooth.
- Whisk the egg yolks: In a separate bowl, whisk together the egg yolks and half of the sugar until they lighten in color.
- Add the melted chocolate and butter mixture, stirring continuously until well combined.
- Prepare the egg whites: Using a clean bowl, beat the egg whites until soft peaks form. Gradually add the remaining sugar, beating until glossy.
- Whip the cream: In another bowl, whip the heavy cream with the vanilla extract until soft peaks form.
- Combine: Gently fold a third of the whipped cream into the chocolate mixture, then carefully incorporate the egg whites followed by the remaining whipped cream.
- Chill: Spoon the mousse into a cake pan lined with parchment paper. Refrigerate for several hours or overnight.
- Serve: Remove the cake from the pan and let it sit for a few minutes. Dust with cocoa powder or serve with fresh berries.
Notes
For egg-free versions, use aquafaba as a replacement for egg whites. Coconut cream can substitute heavy cream.
