Ingredients
- Flour or corn tortillas
- Ground beef or turkey (or shredded chicken/beans for vegetarian)
- Taco seasoning
- Cheddar or Monterey Jack cheese
- Chopped bell peppers, onions, and tomatoes
- Fresh cilantro
- Sour cream or guacamole (for serving)
Instructions
- Preheat your oven to 375°F (190°C).
- Press tortilla rounds into a muffin tin. Warm in the microwave if too stiff.
- Brush edges with olive oil and bake for 10-12 minutes until golden.
- In a skillet, brown ground meat, then add onions, garlic, and seasoning.
- Spoon the meat mixture into each shell, topping with cheese and veggies.
- Return filled cups to the oven for 5-7 minutes, until cheese is melted.
- Serve warm with guacamole, salsa, and other toppings.
