  • 1/2 cup freshly squeezed orange juice
  • 1 tablespoon orange zest
  • 1 cup granulated sugar (or brown sugar)
  • 2 large eggs
  • 1/2 cup unsalted butter, melted (or coconut oil)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another bowl, mix the sugar with the orange juice, zest, and melted butter until combined. Add eggs, whisking in one at a time.
  4. Gradually add dry ingredients to wet mixture and stir until just combined.
  5. Gently fold in cranberries.
  6. Pour the batter into the prepared loaf pan, smoothing the top.
  7. Bake for 50–60 minutes or until a toothpick comes out clean. Cover with foil if browning too quickly.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
