- 1/2 cup freshly squeezed orange juice
- 1 tablespoon orange zest
- 1 cup granulated sugar (or brown sugar)
- 2 large eggs
- 1/2 cup unsalted butter, melted (or coconut oil)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
- In another bowl, mix the sugar with the orange juice, zest, and melted butter until combined. Add eggs, whisking in one at a time.
- Gradually add dry ingredients to wet mixture and stir until just combined.
- Gently fold in cranberries.
- Pour the batter into the prepared loaf pan, smoothing the top.
- Bake for 50–60 minutes or until a toothpick comes out clean. Cover with foil if browning too quickly.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
