  3. Add the remaining sugar and lemon juice: Stir in the rest and heat over medium until boiling.
  4. Stir in the pectin (if using): Boil for a minute and then add the pectin while stirring.
  5. Check the consistency: Drop a spoonful on a cold plate to test if it’s thickened.
  6. Fill your jars: Ladle the hot jam into sterilized jars, leaving headspace.
  7. Process the jars: Process in boiling water for 10-15 minutes.
  8. Allow to cool: Let the jars cool completely before storage.
  9. Label and store: Label your jars and keep them in a cool, dark place.
