  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tablespoon active dry yeast
  • 1 1/4 cups warm milk
  • 1/4 cup unsalted butter, melted

  • 1/2 teaspoon salt
  • 1 tablespoon chai spice blend (cinnamon, cardamom, ginger, nutmeg)
  • 1/4 cup brown sugar (for filling)
  • 2 tablespoons ground cinnamon (for filling)
  • Additional melted butter for spreading

Instructions

  1. Activate the yeast: In a small bowl, combine warm milk, 1 tablespoon of sugar, and the yeast. Let it sit until foamy, about 5-10 minutes.
  2. Make the dough: In a large mixing bowl, whisk together flour, remaining sugar, chai spice blend, and salt. Create a well in the center and add in the yeast mixture, remaining milk, melted butter, and egg. Mix until combined, then knead on a floured surface for about 8 minutes until smooth.
  3. First rise: Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm spot until doubled in size, around 1 hour.
  4. Prep the filling: While the dough rises, mix brown sugar, cinnamon, and chai spices in a bowl.
  5. Roll it out: Once risen, punch down the dough and roll it into a rectangle about 1/4-inch thick.
  6. Spread the filling: Brush melted butter over the dough and sprinkle the sugar mixture on top. Roll the dough tightly into a log and cut into 12 pieces.
  7. Second rise: Place the rolls in a greased baking dish, cover, and let them rise for 30 minutes.
  8. Bake and glaze: Preheat the oven to 350°F (175°C). Bake rolls for 25-30 minutes until golden, then drizzle with glaze.
