Instructions
- Choose your steak: Start with a room-temperature steak, letting it rest outside the fridge for about 30 minutes.
- Season generously: Salt and pepper both sides liberally.
- Heat the skillet: In a heavy-bottomed skillet, heat a tablespoon of oil over high heat until it shimmers.
- Sear the steak: Place the steak in the skillet and sear for 4–5 minutes without moving it.
- Add butter and aromatics: Add butter, garlic, and herbs to the skillet, tilting the pan to spoon melted butter over the steak.
- Baste: Continue basting for another 4–5 minutes until it reaches your desired doneness (135°F for medium-rare).
- Rest the steak: Remove from the skillet and let it rest for at least 5 minutes.
