Instructions

  1. Choose your steak: Start with a room-temperature steak, letting it rest outside the fridge for about 30 minutes.
  2. Season generously: Salt and pepper both sides liberally.
  3. Heat the skillet: In a heavy-bottomed skillet, heat a tablespoon of oil over high heat until it shimmers.
  4. Sear the steak: Place the steak in the skillet and sear for 4–5 minutes without moving it.
