- 8 oz Cream cheese
- 1/2 cup Granulated sugar
- 2 Eggs
- 1 tsp Vanilla extract
- 1 cup Graham cracker crumbs (or cookie crumbs)
- 1/4 cup Unsalted butter, melted
- Optional toppings: Fresh fruits, whipped cream, chocolate drizzle
Instructions
- Preheat your oven to 325°F (160°C).
- Mix graham cracker crumbs with melted butter until well combined and press into the bottom of lined muffin tins.
- Beat the cream cheese in a mixing bowl until smooth; gradually add sugar, mixing until incorporated.
- Add eggs one at a time, blending well after each addition and stir in vanilla extract.
- Spoon the filling into muffin tins, filling each cup about 3/4 full.
- Bake for 20-25 minutes until edges are set but the center jiggles slightly.
- Cool in the tin for 10 minutes, then refrigerate for at least 2 hours.
- Serve with desired toppings.
Notes
Use a water bath for creamier texture and avoid overmixing to prevent cracks.
