Description

Deliciously creamy Mini Cheesecakes, perfect for gatherings and a family favorite. Simple to make and versatile with toppings.


Ingredients

  • 8 oz Cream cheese
  • 1/2 cup Granulated sugar
  • 2 Eggs
  • 1 tsp Vanilla extract
  • 1 cup Graham cracker crumbs (or cookie crumbs)
  • 1/4 cup Unsalted butter, melted
  • Optional toppings: Fresh fruits, whipped cream, chocolate drizzle

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Mix graham cracker crumbs with melted butter until well combined and press into the bottom of lined muffin tins.
  3. Beat the cream cheese in a mixing bowl until smooth; gradually add sugar, mixing until incorporated.
  4. Add eggs one at a time, blending well after each addition and stir in vanilla extract.
  5. Spoon the filling into muffin tins, filling each cup about 3/4 full.
  6. Bake for 20-25 minutes until edges are set but the center jiggles slightly.
  7. Cool in the tin for 10 minutes, then refrigerate for at least 2 hours.
  8. Serve with desired toppings.

Notes

Use a water bath for creamier texture and avoid overmixing to prevent cracks.
