Description

Delicious chocolate cupcakes topped with vanilla buttercream and fresh berries, perfect for celebrating love.


Ingredients

  • 1 ¾ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 ½ cups granulated sugar
  • 1 ½ tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 3 large eggs
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 tsp pure vanilla extract
  • 1 tsp espresso powder
  • 1 cup unsalted butter (for frosting)
  • 4 cups powdered sugar (for frosting)
  • 23 tbsp heavy cream (for frosting)
  • 1 cup fresh strawberries or raspberries
  • Edible flowers for decoration

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
  3. In another mixing bowl, blend sugar, eggs, and oil until light and fluffy.
  4. Gradually add the dry ingredients to this mixture, alternating with buttermilk, until fully combined. Stir in the vanilla extract and espresso powder.
  5. Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let them cool in the pan for 5 minutes before transferring them to a wire rack.
  7. For the frosting, whip unsalted butter until creamy, then gradually mix in powdered sugar, vanilla extract, and a splash of heavy cream. Fold in the pureed berries for added flavor.
  8. Decorate cupcakes with frosting using a piping bag, garnishing with fresh berries and edible flowers.

Notes

Allow cupcakes to cool completely before frosting to maintain decoration. Store in an airtight container for up to three days.
