- 1 ¾ cups all-purpose flour
- ¾ cup unsweetened cocoa powder
- 1 ½ cups granulated sugar
- 1 ½ tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 3 large eggs
- 1 cup buttermilk
- ½ cup vegetable oil
- 2 tsp pure vanilla extract
- 1 tsp espresso powder
- 1 cup unsalted butter (for frosting)
- 4 cups powdered sugar (for frosting)
- 2–3 tbsp heavy cream (for frosting)
- 1 cup fresh strawberries or raspberries
- Edible flowers for decoration
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
- In another mixing bowl, blend sugar, eggs, and oil until light and fluffy.
- Gradually add the dry ingredients to this mixture, alternating with buttermilk, until fully combined. Stir in the vanilla extract and espresso powder.
- Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let them cool in the pan for 5 minutes before transferring them to a wire rack.
- For the frosting, whip unsalted butter until creamy, then gradually mix in powdered sugar, vanilla extract, and a splash of heavy cream. Fold in the pureed berries for added flavor.
- Decorate cupcakes with frosting using a piping bag, garnishing with fresh berries and edible flowers.
Notes
Allow cupcakes to cool completely before frosting to maintain decoration. Store in an airtight container for up to three days.
