Ingredients

- 2 yellow onions, chopped
- 4 cloves garlic, minced
- 8 oz cremini mushrooms, sliced
- 2 cups kale or Swiss chard, chopped
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 tsp fresh basil, chopped
- 1 tsp fresh thyme, chopped
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onions and minced garlic; sauté for 3-5 minutes until fragrant.
- Toss in the mushrooms and cook until browned and tender, about 6-8 minutes.
- Stir in the chopped kale or Swiss chard and cook until wilted, about 2-3 minutes.
- Add the canned tomatoes and vegetable broth; bring to a simmer.
- Incorporate the cannellini beans and fresh herbs, cooking for an additional 15 minutes.
- Taste and adjust seasoning with salt and pepper, adding balsamic vinegar if desired.
- Ladle the soup into bowls and drizzle with extra virgin olive oil before serving.
Notes
Serve with crusty bread for dipping. A drizzle of pesto enhances the flavors.
