Description

A comforting Tuscan Soup filled with mushrooms, greens, and tomatoes, perfect for family gatherings and chilly evenings.


Ingredients

  • 2 yellow onions, chopped
  • 4 cloves garlic, minced
  • 8 oz cremini mushrooms, sliced
  • 2 cups kale or Swiss chard, chopped
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 tsp fresh basil, chopped
  • 1 tsp fresh thyme, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onions and minced garlic; sauté for 3-5 minutes until fragrant.
  3. Toss in the mushrooms and cook until browned and tender, about 6-8 minutes.
  4. Stir in the chopped kale or Swiss chard and cook until wilted, about 2-3 minutes.
  5. Add the canned tomatoes and vegetable broth; bring to a simmer.
  6. Incorporate the cannellini beans and fresh herbs, cooking for an additional 15 minutes.
  7. Taste and adjust seasoning with salt and pepper, adding balsamic vinegar if desired.
  8. Ladle the soup into bowls and drizzle with extra virgin olive oil before serving.

Notes

Serve with crusty bread for dipping. A drizzle of pesto enhances the flavors.
