Ingredients

  • 2 lbs beef (chuck or sirloin), cut into cubes
  • 8 oz fresh cremini or button mushrooms, sliced
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup sour cream
  • 2 tsp paprika
  • Salt and pepper to taste
  • 1 tbsp oil for sautéing
  • Fresh parsley for garnish

Instructions

  1. In a skillet, heat oil and sauté onions and garlic until fragrant.
  2. Season beef with salt and pepper, then sear in the skillet until browned on all sides.
  3. Transfer the beef and sautéed mixture to a slow cooker. Add sliced mushrooms, beef broth, and seasonings.
  4. Set the slow cooker to low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before serving, stir in the sour cream.
  6. Serve over egg noodles, rice, or mashed potatoes, garnished with freshly chopped parsley.

Notes

For added creaminess, consider thickening the sauce with a cornstarch slurry if desired. Avoid adding sour cream too early to prevent curdling.
