- 2 lbs beef (chuck or sirloin), cut into cubes
- 8 oz fresh cremini or button mushrooms, sliced
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 cup sour cream
- 2 tsp paprika
- Salt and pepper to taste
- 1 tbsp oil for sautéing
- Fresh parsley for garnish
Instructions
- In a skillet, heat oil and sauté onions and garlic until fragrant.
- Season beef with salt and pepper, then sear in the skillet until browned on all sides.
- Transfer the beef and sautéed mixture to a slow cooker. Add sliced mushrooms, beef broth, and seasonings.
- Set the slow cooker to low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, stir in the sour cream.
- Serve over egg noodles, rice, or mashed potatoes, garnished with freshly chopped parsley.
Notes
For added creaminess, consider thickening the sauce with a cornstarch slurry if desired. Avoid adding sour cream too early to prevent curdling.
