Description

A delightful Red Velvet Poke Cake that combines a moist cake with creamy frosting, perfect for Valentine’s Day celebrations.


Ingredients

  • 1 box red velvet cake mix
  • 3 large eggs
  • 1/2 cup vegetable oil (or melted butter)
  • 1 cup buttermilk (or milk with vinegar)
  • 1 tbsp unsweetened cocoa powder
  • 8 oz cream cheese, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • Milk, as needed for frosting consistency

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large mixing bowl, combine cake mix, eggs, oil, buttermilk, and cocoa powder. Mix on medium speed until smooth, about 2 minutes.
  3. Pour the batter into the prepared pan and bake for 30-35 minutes. Let cool for 10 minutes.
  4. Use a wooden spoon handle to poke holes in the cake, about 1 inch apart.
  5. In another bowl, beat cream cheese until smooth. Gradually add powdered sugar and vanilla; mix until combined, then add milk to desired consistency.
  6. Spoon the frosting into the poke holes, letting it seep in.
  7. Spread remaining frosting over the top of the cake and decorate if desired.
  8. Chill in the refrigerator for at least 2 hours before serving.

Notes

Make sure to let the cake cool completely to avoid melting the frosting. It’s best served chilled.
