Description
A delightful Red Velvet Poke Cake that combines a moist cake with creamy frosting, perfect for Valentine’s Day celebrations.

- 1 box red velvet cake mix
- 3 large eggs
- 1/2 cup vegetable oil (or melted butter)
- 1 cup buttermilk (or milk with vinegar)
- 1 tbsp unsweetened cocoa powder
- 8 oz cream cheese, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
- Milk, as needed for frosting consistency
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large mixing bowl, combine cake mix, eggs, oil, buttermilk, and cocoa powder. Mix on medium speed until smooth, about 2 minutes.
- Pour the batter into the prepared pan and bake for 30-35 minutes. Let cool for 10 minutes.
- Use a wooden spoon handle to poke holes in the cake, about 1 inch apart.
- In another bowl, beat cream cheese until smooth. Gradually add powdered sugar and vanilla; mix until combined, then add milk to desired consistency.
- Spoon the frosting into the poke holes, letting it seep in.
- Spread remaining frosting over the top of the cake and decorate if desired.
- Chill in the refrigerator for at least 2 hours before serving.
Notes
Make sure to let the cake cool completely to avoid melting the frosting. It’s best served chilled.
