- 6 cups Rice Krispies cereal
- 10 ounces mini marshmallows
- 4 tablespoons butter
- 1 cup pumpkin puree
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
Instructions
- Prep your pan by lining an 8×8 inch baking dish with parchment paper.
- Melt 4 tablespoons of butter in a large saucepan over low heat, then add 10 ounces of mini marshmallows, stirring until smooth.
- Stir in 1 cup of pumpkin puree and 1 teaspoon of vanilla extract until well combined.
- Remove from heat and fold in 1 teaspoon of pumpkin pie spice, then gradually add 6 cups of Rice Krispies, mixing until coated.
- Transfer mixture to the prepared baking dish and press evenly with a spatula or greased hands.
- Let cool at room temperature for about 30 minutes before cutting into squares.
- Optional: Drizzle with chocolate or sprinkle with fall-themed icing.
Notes
For a dairy-free version, use coconut oil instead of butter. You can also substitute pumpkin puree with applesauce for a different flavor.
