Description

Delightful Rice Krispie treats infused with the warm flavors of pumpkin spice, perfect for autumn gatherings.


Ingredients

  • 6 cups Rice Krispies cereal
  • 10 ounces mini marshmallows
  • 4 tablespoons butter
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice

Instructions

  1. Prep your pan by lining an 8×8 inch baking dish with parchment paper.
  2. Melt 4 tablespoons of butter in a large saucepan over low heat, then add 10 ounces of mini marshmallows, stirring until smooth.
  3. Stir in 1 cup of pumpkin puree and 1 teaspoon of vanilla extract until well combined.
  4. Remove from heat and fold in 1 teaspoon of pumpkin pie spice, then gradually add 6 cups of Rice Krispies, mixing until coated.
  5. Transfer mixture to the prepared baking dish and press evenly with a spatula or greased hands.
  6. Let cool at room temperature for about 30 minutes before cutting into squares.
  7. Optional: Drizzle with chocolate or sprinkle with fall-themed icing.

Notes

For a dairy-free version, use coconut oil instead of butter. You can also substitute pumpkin puree with applesauce for a different flavor.
