Ingredients

  • 1 cup Brown Sugar
  • 1/2 cup White Chocolate Chips
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1 Egg
  • 1 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1/4 tsp Salt
  • 1/2 cup Butter (softened)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, cream softened butter with brown sugar and granulated sugar until light and fluffy (about 3-4 minutes).
  4. Add pumpkin puree and egg to the butter mixture, mixing until smooth.
  5. Slowly add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the white chocolate chips.
  7. Scoop rounded tablespoons of dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until golden brown around the edges.
  9. Let cool before transferring to a wire rack.
