Ingredients
- Fresh lemons (juice and zest from ¾ cup)
- Cream cheese (full-fat preferred)
- Sweetened condensed milk
- Cool Whip or Heavy whipping cream
- Graham cracker crust
Instructions
- Prepare the crust by combining crushed graham crackers with melted butter. Press this mixture into a pie dish and chill in the fridge for about 30 minutes.
- Zest and juice the lemons to obtain approximately ¾ cup of juice.
- In a mixing bowl, beat the cream cheese until smooth. Add the sweetened condensed milk and mix until fully incorporated.
- Gradually mix in the lemon juice and zest.
- Fold in the Cool Whip or whipped heavy cream carefully.
- Pour the mixture into the chilled crust and spread evenly. Chill for at least 4 hours or overnight for best results.
- Before serving, top with extra whipped topping and lemon slices if desired.
Notes
