Description

Ingredients

  • Fresh lemons (juice and zest from ¾ cup)
  • Cream cheese (full-fat preferred)
  • Sweetened condensed milk
  • Cool Whip or Heavy whipping cream
  • Graham cracker crust

Instructions

  1. Prepare the crust by combining crushed graham crackers with melted butter. Press this mixture into a pie dish and chill in the fridge for about 30 minutes.
  2. Zest and juice the lemons to obtain approximately ¾ cup of juice.
  3. In a mixing bowl, beat the cream cheese until smooth. Add the sweetened condensed milk and mix until fully incorporated.
  4. Gradually mix in the lemon juice and zest.
  5. Fold in the Cool Whip or whipped heavy cream carefully.
  6. Pour the mixture into the chilled crust and spread evenly. Chill for at least 4 hours or overnight for best results.
