- 1 box Jiffy Corn Muffin Mix
- 1 cup sour cream
- 2 large eggs
- 1 cup whole kernel corn
- 1 cup cream-style corn
- 1/2 cup butter, melted
- 1/2 cup onion, sautéed
- 2 cloves garlic, minced
- 1 cup shredded cheese (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the Jiffy corn muffin mix, sour cream, and eggs until well blended.
- Gently fold in both the whole kernel and cream-style corn, followed by the sautéed onions and minced garlic.
- Lightly grease a baking dish with butter or non-stick spray.
- Transfer the mixture into the prepared baking dish, spreading it evenly.
- Bake for 40–50 minutes, or until the top is golden brown and a toothpick comes out clean when inserted in the center.
- Allow it to cool for a few minutes before serving.
