  • 1 box Jiffy Corn Muffin Mix
  • 1 cup sour cream
  • 2 large eggs
  • 1 cup whole kernel corn
  • 1 cup cream-style corn
  • 1/2 cup butter, melted
  • 1/2 cup onion, sautéed
  • 2 cloves garlic, minced
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the Jiffy corn muffin mix, sour cream, and eggs until well blended.
  3. Gently fold in both the whole kernel and cream-style corn, followed by the sautéed onions and minced garlic.
  4. Lightly grease a baking dish with butter or non-stick spray.
  5. Transfer the mixture into the prepared baking dish, spreading it evenly.
  6. Bake for 40–50 minutes, or until the top is golden brown and a toothpick comes out clean when inserted in the center.
  7. Allow it to cool for a few minutes before serving.
