Ingredients

- 2 cups all-purpose flour
- 1 packet active dry yeast
- 1 teaspoon salt
- 3/4 cup warm water
- 2 tablespoons olive oil
Instructions
- In a large mixing bowl, combine flour, yeast, and salt. Gradually add warm water and olive oil. Stir until a rough dough forms.
- Knead the dough on a floured surface for about 10 minutes until it springs back when poked.
- Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 60 minutes or until doubled in size.
- Punch down the dough, divide it into 8 or 10 equal pieces, roll into balls, and flatten into circles about 1/4-inch thick.
- Allow the shaped pitas to rise again for about 30 minutes.
- Preheat your oven to 475°F (245°C) and place a baking sheet inside. Bake the pitas for 5-7 minutes until they puff up.
- Let the pitas cool on a wire rack before serving them warm.
Notes
For extra puffiness, add steam to the oven by placing a pan of hot water inside while baking. If pitas are overbaked, spritz with water and wrap in a towel to soften.
