Description

A vibrant salsa made with roasted tomatillos, garlic, jalapeños, and fresh cilantro, perfect for dipping or as a zesty topping.


Ingredients

  • 1 lb tomatillos
  • 2 jalapeños (adjust for spice level)
  • 3 cloves garlic
  • 1/2 cup fresh cilantro
  • Juice of 2 limes
  • 1 tsp sea salt

Instructions

  1. Remove the husks and rinse tomatillos under cool water. Cut them in half.
  2. Preheat your oven to 425°F (220°C) and place tomatillos cut-side down on a baking sheet. Roast for 15-20 minutes until softened and slightly charred.
  3. Once cooled, place tomatillos in a blender. Add jalapeños, garlic, cilantro, and lime juice. Blend until desired consistency is reached.
  4. Season to taste with salt. Chill in the fridge for at least an hour before serving.
  5. Serve with tortilla chips, tacos, or grilled meats.

Notes

For a smokier flavor, consider grilling the tomatillos instead of roasting them. Let the salsa rest in the fridge for optimal flavor.
