Ingredients

- 1 lb tomatillos
- 2 jalapeños (adjust for spice level)
- 3 cloves garlic
- 1/2 cup fresh cilantro
- Juice of 2 limes
- 1 tsp sea salt
Instructions
- Remove the husks and rinse tomatillos under cool water. Cut them in half.
- Preheat your oven to 425°F (220°C) and place tomatillos cut-side down on a baking sheet. Roast for 15-20 minutes until softened and slightly charred.
- Once cooled, place tomatillos in a blender. Add jalapeños, garlic, cilantro, and lime juice. Blend until desired consistency is reached.
- Season to taste with salt. Chill in the fridge for at least an hour before serving.
- Serve with tortilla chips, tacos, or grilled meats.
Notes
For a smokier flavor, consider grilling the tomatillos instead of roasting them. Let the salsa rest in the fridge for optimal flavor.
