  • 1 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup high-quality cocoa powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a microwave-safe bowl, melt your butter and half of the chocolate chips together until smooth.
  3. In a mixing bowl, combine brown sugar, eggs, and vanilla; whisk until glossy.
  4. Gradually add the melted chocolate mixture to the sugar and egg blend, stirring gently.
  5. In another bowl, whisk together flour and cocoa powder; fold into the wet ingredients until just combined.
  6. Fold in the remaining chocolate chips.
  7. Scoop out spoonfuls of cookie dough onto a lined baking sheet.
  8. Bake for 10-12 minutes until the edges are set but centers are soft.
  9. Cool for 5 minutes on the baking sheet before transferring to a wire rack.

Notes

For a twist, swap half the butter for coconut oil. Try using non-dairy chocolate chips for a dairy-free version.
