- 1 lb ground beef (or turkey)
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) kidney beans, rinsed and drained
- 1 cup corn (canned or frozen)
- 2 tbsp taco seasoning
- 4 cups chicken or vegetable broth
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat.
- Sauté chopped onions and minced garlic until fragrant and translucent, about 3-4 minutes.
- Add ground beef (or your choice of protein) and cook until browned, breaking it up with a wooden spoon. Drain any excess fat.
- Toss in diced bell peppers and cook for an additional 2-3 minutes until softened.
- Stir in canned tomatoes, beans, corn, taco seasoning, and broth until well combined.
- Bring the soup to a gentle simmer and cook for 20-25 minutes to meld the flavors.
- Taste and adjust seasoning as necessary. Add jalapeños or cayenne for heat if desired.
- Serve hot with your favorite toppings: avocado, sour cream, cilantro, and lime.
