Description

A comforting, creamy dish of oven-baked chicken thighs with a rich sauce, perfect for family gatherings.


Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1 cup heavy cream (or half-and-half)
  • 4 cloves fresh garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 cup cremini or button mushrooms, sliced
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 onion, diced
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Olive oil for searing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat a large, oven-safe skillet over medium-high heat and add olive oil.
  3. Season the chicken thighs with salt and pepper, then place them skin-side down in the hot skillet. Sear for about 5-7 minutes until golden brown.
  4. Flip the chicken and cook for an additional 3-4 minutes, then remove the chicken from the skillet and set aside.
  5. Add butter to the same skillet and sauté diced onions until translucent.
  6. Add minced garlic and sauté for about a minute until aromatic.
  7. Stir in mushrooms and let them cook until browned, about 5 minutes.
  8. Pour in chicken broth and heavy cream, stir to combine, and allow to simmer until slightly thickened. Season to taste.
  9. Return the chicken to the skillet, spoon sauce over each piece, and transfer to the preheated oven.
  10. Bake for 30-35 minutes or until chicken reaches an internal temperature of 165°F (75°C).
  11. Garnish with fresh herbs before serving.
