- 4 bone-in, skin-on chicken thighs
- 1 cup heavy cream (or half-and-half)
- 4 cloves fresh garlic, minced
- 1 cup low-sodium chicken broth
- 1 cup cremini or button mushrooms, sliced
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh parsley, chopped
- 1 onion, diced
- 2 tablespoons butter
- Salt and pepper to taste
- Olive oil for searing
Instructions
- Preheat your oven to 375°F (190°C).
- Heat a large, oven-safe skillet over medium-high heat and add olive oil.
- Season the chicken thighs with salt and pepper, then place them skin-side down in the hot skillet. Sear for about 5-7 minutes until golden brown.
- Flip the chicken and cook for an additional 3-4 minutes, then remove the chicken from the skillet and set aside.
- Add butter to the same skillet and sauté diced onions until translucent.
- Add minced garlic and sauté for about a minute until aromatic.
- Stir in mushrooms and let them cook until browned, about 5 minutes.
- Pour in chicken broth and heavy cream, stir to combine, and allow to simmer until slightly thickened. Season to taste.
- Return the chicken to the skillet, spoon sauce over each piece, and transfer to the preheated oven.
- Bake for 30-35 minutes or until chicken reaches an internal temperature of 165°F (75°C).
- Garnish with fresh herbs before serving.

Serve with mashed potatoes, steamed green beans, or crusty bread.
