Ingredients

- 1 lb fresh lump crab meat
- 1 lb large shrimp, peeled and deveined
- 2 cups heavy cream
- 4 tbsp unsalted butter
- 3 cloves garlic, minced
- 1 onion, diced
- 2 stalks celery, diced
- 4 cups seafood stock
- 1/2 cup dry sherry
- Salt and pepper to taste
- Fresh thyme and parsley for garnish
Instructions
- In a large pot, melt the butter over medium heat. Add minced garlic, diced onion, and celery. Sauté until softened and fragrant, about 5–7 minutes.
- Pour in the dry sherry, scraping the bottom of the pot to release any flavorful bits. Allow it to simmer for 1-2 minutes.
- Stir in the seafood stock and bring it to a light simmer. Let it cook for about 10 minutes to meld the flavors.
- Slowly add in the heavy cream, stirring continuously until the bisque takes on a luscious texture.
- Gently fold in the crab and shrimp, cooking for about 5 minutes until they’re just opaque. Season with salt, pepper, and fresh herbs.
- Ladle your bisque into bowls and garnish with more fresh herbs for an added pop of color and flavor.
Notes
Always taste your bisque before serving, and adjust your seasoning as needed. For a smoother texture, consider using an immersion blender for a few seconds to purée parts of the bisque before adding the seafood.
