- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1/2 cup melted butter or olive oil
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a loaf pan with butter or line it with parchment.
- In a medium bowl, whisk together the flour, sugars, baking powder, baking soda, and salt.
- In a separate bowl, beat together the eggs, melted butter or oil, and vanilla extract.
- Fold in the cranberries and walnuts, mixing until just moistened.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 60-70 minutes, checking for doneness with a toothpick.
- Cool in the pan for 10 minutes before transferring to a wire rack.
Notes
For extra flavor, consider adding a sprinkle of cinnamon or nutmeg. A powdered sugar glaze can be drizzled on once cooled.
