  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup melted butter or olive oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a loaf pan with butter or line it with parchment.
  3. In a medium bowl, whisk together the flour, sugars, baking powder, baking soda, and salt.
  4. In a separate bowl, beat together the eggs, melted butter or oil, and vanilla extract.
  5. Fold in the cranberries and walnuts, mixing until just moistened.
  6. Pour the batter into the prepared pan and spread evenly.
  7. Bake for 60-70 minutes, checking for doneness with a toothpick.
  8. Cool in the pan for 10 minutes before transferring to a wire rack.

Notes

For extra flavor, consider adding a sprinkle of cinnamon or nutmeg. A powdered sugar glaze can be drizzled on once cooled.
