Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and seed the butternut squash. Cut it into small, uniform cubes.
  3. Toss the cubes in olive oil, salt, and pepper, then roast for 25-30 minutes until tender.
  4. While the squash roasts, cook the quinoa in vegetable broth according to package instructions.
  5. In a skillet, heat olive oil over medium heat, sauté onion and garlic until fragrant, about 3-5 minutes.
  6. Combine roasted squash and fluffy quinoa in the skillet, adding fresh herbs and any optional ingredients.
