Description

Ingredients

  • 4 cups all-purpose flour
  • 2 1/4 teaspoons active dry yeast
  • 1 cup whole milk (or buttermilk)
  • 1/3 cup unsalted butter, softened (or coconut oil)
  • 1/2 cup Biscoff cookie butter
  • 1/2 cup brown sugar (or coconut sugar)
  • 2 teaspoons cinnamon
  • 1 large egg (or flaxseed/chia seed substitute)
  • 1/2 teaspoon salt
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)

Instructions

  1. In a mixing bowl, combine warm milk and yeast, letting it sit until frothy—about 5 minutes.
  2. Incorporate softened butter, sugar, and an egg; mix well.
  3. In a separate bowl, whisk together flour and salt. Gradually add this to the wet ingredients, mixing until a dough forms.
  4. Transfer the dough onto a floured surface and knead for about 7 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover with a towel, and let it rise until doubled in size—around 1 to 1.5 hours.
  6. Roll the dough out into a rectangle and spread Biscoff cookie butter across the surface.
  7. Mix together brown sugar and cinnamon, and sprinkle evenly over the cookie butter.
  8. Tightly roll the dough into a log and cut into rolls—about 1-2 inches thick.
  9. Place rolls in a greased baking dish, cover, and allow to rise for another 30 minutes.
  10. Preheat oven to 350°F (175°C) and bake rolls for 25-30 minutes or until golden brown.
  11. While still warm, mix powdered sugar with milk until smooth and drizzle over the rolls.

Notes

For a gluten-free option, use a gluten-free flour blend. These rolls freeze well and can be reheated in the oven.
