- 2 1/4 teaspoons active dry yeast
- 1 cup whole milk (or buttermilk)
- 1/3 cup unsalted butter, softened (or coconut oil)
- 1/2 cup Biscoff cookie butter
- 1/2 cup brown sugar (or coconut sugar)
- 2 teaspoons cinnamon
- 1 large egg (or flaxseed/chia seed substitute)
- 1/2 teaspoon salt
- 1 cup powdered sugar (for glaze)
- 2 tablespoons milk (for glaze)
Instructions
- In a mixing bowl, combine warm milk and yeast, letting it sit until frothy—about 5 minutes.
- Incorporate softened butter, sugar, and an egg; mix well.
- In a separate bowl, whisk together flour and salt. Gradually add this to the wet ingredients, mixing until a dough forms.
- Transfer the dough onto a floured surface and knead for about 7 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a towel, and let it rise until doubled in size—around 1 to 1.5 hours.
- Roll the dough out into a rectangle and spread Biscoff cookie butter across the surface.
- Mix together brown sugar and cinnamon, and sprinkle evenly over the cookie butter.
- Tightly roll the dough into a log and cut into rolls—about 1-2 inches thick.
- Place rolls in a greased baking dish, cover, and allow to rise for another 30 minutes.
- Preheat oven to 350°F (175°C) and bake rolls for 25-30 minutes or until golden brown.
- While still warm, mix powdered sugar with milk until smooth and drizzle over the rolls.
Notes
For a gluten-free option, use a gluten-free flour blend. These rolls freeze well and can be reheated in the oven.
