  • 24 Chipotle Peppers in Adobo (to taste)
  • 4 cloves Garlic (minced)
  • 1 Onion (yellow or white, chopped)
  • 1 tablespoon Cumin
  • 1 tablespoon Smoked Paprika
  • Juice of 2 Limes
  • 2 tablespoons Olive Oil
  • 1/4 cup Fresh Cilantro (chopped, for serving)

Instructions

  1. Make the Marinade: In a bowl, mix chopped chipotle peppers, minced garlic, onion, lime juice, cumin, smoked paprika, and olive oil. Blend until smooth.
  2. Prep the Chicken: Place chicken in a shallow dish and pour the marinade over it, ensuring each piece is well coated. Cover and marinate in the refrigerator for at least 30 minutes.
  3. Cook the Chicken: Preheat grill or skillet over medium-high heat. Add marinated chicken and cook for 6-7 minutes on each side, until the internal temperature reaches 165°F.
  4. Let It Rest: Take the chicken off the heat and let it rest for 5-10 minutes before slicing.
