- 2 lbs Chicken Breasts or Thighs (boneless preferred)
- 2–4 Chipotle Peppers in Adobo (to taste)
- 4 cloves Garlic (minced)
- 1 Onion (yellow or white, chopped)
- 1 tablespoon Cumin
- 1 tablespoon Smoked Paprika
- Juice of 2 Limes
- 2 tablespoons Olive Oil
- 1/4 cup Fresh Cilantro (chopped, for serving)
Instructions
- Make the Marinade: In a bowl, mix chopped chipotle peppers, minced garlic, onion, lime juice, cumin, smoked paprika, and olive oil. Blend until smooth.
- Prep the Chicken: Place chicken in a shallow dish and pour the marinade over it, ensuring each piece is well coated. Cover and marinate in the refrigerator for at least 30 minutes.
- Cook the Chicken: Preheat grill or skillet over medium-high heat. Add marinated chicken and cook for 6-7 minutes on each side, until the internal temperature reaches 165°F.
- Let It Rest: Take the chicken off the heat and let it rest for 5-10 minutes before slicing.
- Serve: Slice the chicken and serve over rice, in tortillas, or salad, topped with fresh cilantro and your favorite toppings.
Notes
For a vegetarian option, substitute chicken with tofu. Adjust spice levels with the number of chipotle peppers used in the marinade.
