- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 cups all-purpose flour
- 1 large egg
- 2 cups Granny Smith or Honeycrisp apples, chopped
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Cream together softened butter and sugars until light and fluffy.
- Beat in the egg and vanilla extract until combined.
- Gradually add in the flour and salt, mixing until just combined.
- Cover and refrigerate the dough for about 30 minutes.
- Core and chop apples, then sauté with cinnamon and sugar until softened.
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Roll dough into 1-inch balls and place on prepared baking sheet.
- Press down the center of each cookie to create a well and fill generously with apple mixture.
- Bake for 12-15 minutes until edges are lightly golden, then cool on a wire rack.
