Description

Delicious apple pie thumbprint cookies combining the flavors of buttery cookie dough and spiced apple filling, perfect for fall gatherings.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 cups all-purpose flour
  • 1 large egg
  • 2 cups Granny Smith or Honeycrisp apples, chopped
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Cream together softened butter and sugars until light and fluffy.
  2. Beat in the egg and vanilla extract until combined.
  3. Gradually add in the flour and salt, mixing until just combined.
  4. Cover and refrigerate the dough for about 30 minutes.
  5. Core and chop apples, then sauté with cinnamon and sugar until softened.
  6. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. Roll dough into 1-inch balls and place on prepared baking sheet.
  8. Press down the center of each cookie to create a well and fill generously with apple mixture.
  9. Bake for 12-15 minutes until edges are lightly golden, then cool on a wire rack.
