Ingredients

  • 2 cups Granny Smith or Honeycrisp apples, peeled, cored, and chopped
  • 2 cups old-fashioned oats
  • 1 cup all-purpose flour (or gluten-free alternative)
  • 1 cup brown sugar (or coconut sugar)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted (or coconut oil or applesauce)
  • 2 large eggs (or flax eggs for vegan option)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking pan with parchment paper.
  2. In a large bowl, combine oats, flour, brown sugar, cinnamon, and a pinch of salt.
  3. Peel, core, and chop the apples; toss them in a sprinkle of cinnamon.
  4. In another bowl, melt butter and mix in the eggs until well combined.
  5. Pour the wet mixture into the dry ingredients and stir until just combined. Gently fold in the apples.
  6. Pour the mixture into the prepared baking pan, spread evenly, and bake for 25-30 minutes until golden.
  7. Let the bars cool in the pan for about 10 minutes before lifting them out using the parchment paper to cool completely before slicing.

Notes

These bars can be enjoyed plain or topped with nut butter or yogurt. They freeze well for up to three months.
