Description

Delicious and hearty vegan sweet potato meatballs that are packed with flavor and perfect for any gathering.


Ingredients

  • 2 medium sweet potatoes
  • 1 cup cremini or button mushrooms, finely chopped
  • 1 cup breadcrumbs (whole-wheat or gluten-free)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 1/4 cup fresh parsley or basil, chopped
  • 1/4 cup nutritional yeast (optional)
  • 2 tbsp olive oil (for sautéing)
  • Optional add-ins: 1/2 cup chopped spinach or grated carrots

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Bake the sweet potatoes on the prepared baking sheet for about 45-60 minutes until tender. Cool slightly before peeling or scooping out the insides.
  3. In a skillet, heat a drizzle of olive oil over medium heat. Add the finely chopped mushrooms and sauté until golden. Add minced garlic towards the end.
  4. In a large mixing bowl, mash the sweet potatoes until smooth. Stir in the sautéed mushrooms, breadcrumbs, spices, and herbs. Mix until combined.
  5. With clean hands, scoop out portions and roll them into golf ball-sized meatballs.
  6. Place the meatballs on the baking sheet, lightly brush or spray them with olive oil, and bake for 20-25 minutes until crispy outside and warm inside.
  7. Serve with marinara sauce, over pasta, or enjoy as a snack.

Notes

Let the formed meatballs rest for 10-15 minutes before baking to help maintain their shape. Taste the mixture to adjust seasonings to your preference.
