Delicious and hearty vegan sweet potato meatballs that are packed with flavor and perfect for any gathering.
Ingredients

- 2 medium sweet potatoes
- 1 cup cremini or button mushrooms, finely chopped
- 1 cup breadcrumbs (whole-wheat or gluten-free)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp Italian seasoning
- 1/4 cup fresh parsley or basil, chopped
- 1/4 cup nutritional yeast (optional)
- 2 tbsp olive oil (for sautéing)
- Optional add-ins: 1/2 cup chopped spinach or grated carrots
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Bake the sweet potatoes on the prepared baking sheet for about 45-60 minutes until tender. Cool slightly before peeling or scooping out the insides.
- In a skillet, heat a drizzle of olive oil over medium heat. Add the finely chopped mushrooms and sauté until golden. Add minced garlic towards the end.
- In a large mixing bowl, mash the sweet potatoes until smooth. Stir in the sautéed mushrooms, breadcrumbs, spices, and herbs. Mix until combined.
- With clean hands, scoop out portions and roll them into golf ball-sized meatballs.
- Place the meatballs on the baking sheet, lightly brush or spray them with olive oil, and bake for 20-25 minutes until crispy outside and warm inside.
- Serve with marinara sauce, over pasta, or enjoy as a snack.
Notes
Let the formed meatballs rest for 10-15 minutes before baking to help maintain their shape. Taste the mixture to adjust seasonings to your preference.
