Ingredients

  • 8 oz dark chocolate (70% cocoa), chopped
  • 1/2 cup unsalted butter
  • 3 large eggs, room temperature
  • 1/2 cup granulated sugar
  • 1 tsp pure vanilla extract
  • 1 cup fresh raspberries
  • 1 cup heavy cream, for whipping
  • Optional: sugar for whipped cream

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a springform pan.
  2. In a heatproof bowl, combine dark chocolate and butter. Melt over a pot of simmering water and stir until smooth. Let cool slightly.
  3. In a separate bowl, whisk together eggs and sugar until light and fluffy, about 5 minutes.
  4. Gently fold the melted chocolate mixture into the egg mixture.
  5. Fold in raspberries carefully.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 25-30 minutes or until the center is slightly jiggly. It will firm up while cooling.
  8. Let it cool in the pan before refrigerating for at least 4 hours or overnight.
  9. Before serving, whip the heavy cream with a bit of sugar and vanilla until soft peaks form.
  10. Release the cake from the springform pan, top with whipped cream and extra raspberries, and serve.
