- 8 oz dark chocolate (70% cocoa), chopped
- 1/2 cup unsalted butter
- 3 large eggs, room temperature
- 1/2 cup granulated sugar
- 1 tsp pure vanilla extract
- 1 cup fresh raspberries
- 1 cup heavy cream, for whipping
- Optional: sugar for whipped cream
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a springform pan.
- In a heatproof bowl, combine dark chocolate and butter. Melt over a pot of simmering water and stir until smooth. Let cool slightly.
- In a separate bowl, whisk together eggs and sugar until light and fluffy, about 5 minutes.
- Gently fold the melted chocolate mixture into the egg mixture.
- Fold in raspberries carefully.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 25-30 minutes or until the center is slightly jiggly. It will firm up while cooling.
- Let it cool in the pan before refrigerating for at least 4 hours or overnight.
- Before serving, whip the heavy cream with a bit of sugar and vanilla until soft peaks form.
- Release the cake from the springform pan, top with whipped cream and extra raspberries, and serve.
Notes
Use high-quality chocolate for the best flavor. Fresh, ripe raspberries are essential for this recipe.
