- 1 Beef Roast (chuck or sirloin)
- 2 cups Fresh Cranberries (or frozen)
- 1 cup Balsamic Vinegar
- 1/2 cup Brown Sugar
- 2 tablespoons Olive Oil
- 4 cloves Garlic, minced
- Fresh Herbs (rosemary and thyme)
- Salt and Pepper, to taste
Instructions
- Preheat your oven to 325°F (163°C).
- Heat olive oil in a skillet over medium-high heat and season the beef with salt and pepper. Sear the beef on all sides until golden brown, about 6-8 minutes.
- In a medium saucepan, combine cranberries, balsamic vinegar, brown sugar, minced garlic, and herbs. Simmer over medium heat until the sauce thickens and cranberries break down.
- Place the seared beef in a roasting pan and pour the cranberry balsamic glaze over it, brushing to coat evenly.
- Roast in the oven for 2-3 hours, until the internal temperature reaches 135°F (57°C) for medium-rare or 145°F (63°C) for medium.
- Allow the roast to rest for 15-20 minutes before slicing.
- Serve with the glaze drizzled on top and enjoy!
